Determine the optimum time to rack your must! Racking too soon leads to increased risk of excess suspended solids, which causes excess fusel alcohol production, impaired fruitiness, and hydrogen sulfide/off-odor production. Rack too late or remove too many suspended solids, and end up causing fermentation in the clarification tank, slowing down fermentation, and reducing yeast viability.
